New York City: Bubbys Pie Company (August 2012)


My spouse and I had drinks at Bubbys Pie Company in mid-August 2012 after we enjoyed dinner nearby. We sat at the bar, and the hand-crafted cocktails were very strong. In the basement near the restrooms, they had one of those old photo booths, and we took some silly pictures as a souvenir. Bubby’s joins a handful of revivalists seeking to restore this national treasure of the soda fountain and it does so with fierce enthusiasm. In August 1990 Bubby’s began as a wholesale pie company. By November we opened the restaurant with two tables, a coffee brewer, and a pizza oven to bake pies in. From the day we opened, Tribeca embraced us and Bubby’s doors have been opened to neighbors, friends and anyone else who wanders by ever since. From its beginnings as a pie company, Bubby’s has set the standard for traditional American food, cooking everything from scratch, using many traditional family recipes from the best sources of ingredients available.  Most of Bubby’s recipes are straight out of recipe boxes from all over America.
